SPANISH OMELETTE (TORTILLA DE PATATA)

|| onion, sliced
|| potatoes, peeled then thinly sliced
|| PUREFOODS FIESTA HAM, chopped
|| chopped red and green bell peppers
|| MAGNOLIA BROWN EGGS, beaten
|| iodized fine salt
Makes 6 servings.
- In a pan, melt margarine. Sauté onion and potatoes until slightly tender. Mix in ham and bell peppers. Transfer to an ovenproof dish.
- Beat eggs in a bowl and season with salt and pepper. Pour over potato mixture.
- Bake in the oven set at 350oF for 45-50 minutes or until eggs have set or 15-20 minutes in a preheated oven toaster set on high.
