PAD THAI PIZZA


Ingredients:

1/2 kg MAGNOLIA CHICKEN STATION THIGH FILLETS
1 pc pre-baked pizza crust (12 inches)

MARINADE:

1 tsp iodized fine salt
1 tsp pepper
1 tsp Thai patis
1 tbsp store bought pad thai paste*
1 tbsp store bought tamarind paste*

TOPPING:

1/3 cup sweet style pizza sauce
2 tbsp store-bought pad thai paste
1 cup grated mozzarella cheese
1 (50 g) pc red bell pepper, cubed
1 (50 g) pc green bell pepper, cubed
2 tbsp diced onions
50 g cooked and peeled shrimps
100 g fried tofu cubes
100 g fried pad thai noodles
2 tbsp chopped wansoy
1 pc MAGNOLIA BROWN EGG, hard-boiled then cut into 8

May be bought in international sections of supermarkets.

Procedure:

  1. Combine ingredients for marinade in a small bowl. Marinate chicken for at least 30 minutes. Grill for 5 minutes on each side then cut into cubes. Set aside.
  2. Preheat oven to 550°F.
  3. On pizza crust, spread pizza sauce and pad thai paste. Top with mozzarella and the rest of the toppings. Bake for 3 minutes.

Makes 8 servings.
