GRILLED PEPPER CHEESE SPREAD


Ingredients:

CHEESE SPREAD:

1 pc onion, quartered
4 cloves garlic, crushed
2 tbsp olive oil
2 pc red bell peppers, grilled, peeled and seeded
2 cups grated MAGNOLIA QUESO DE BOLA
1/4 cup MAGNOLIA GOLD BUTTER UNSALTED, melted
1/4 cup SAN MIGUEL PALE PILSEN
1/4 tsp cayenne pepper
2 tbsp chopped chives (garnish)

MELBA TOAST:

1 loaf white bread, trim sides
1/4 cup sliced black olives
1/4 cup sliced green olives
1/8 cup pimiento strips (1/2" thick)

Procedure:

 

  1. Preheat oven at 375°F.
  2. In a baking pan, place onion, garlic and olive oil. Bake for 15 minutes then combine with other cheese spread ingredients except chives, place all ingredients in a food processor and blend until smooth. Transfer to a bowl and garnish with chives.
  3. Remove sides of white bread. Use a rolling pin and flatten bread. Cut into 4 triangles. Toast at 400°F until brown.
  4. Spoon cheese spread on the Melba toast and garnish with green then black olives and pimiento.

Makes 6 to 8 servings.
