BEEF RIB CURRY


Ingredients:

1 kg MONTEREY BEEF SHORT RIBS or KALDERETA CUT
1/4 cup cooking oil
1/2 cup chopped onion
1/2 cup chopped garlic
1/2 cup chopped ginger
3 pc dried chilies
1/2 cup basil leaves, chopped
1 tbsp cumin powder
1/2 cup wansoy leaves
2 pc dried kaffir lime leaves
2 cups coconut cream
1 L water
2 tbsp sugar
1/2 cup fish sauce
salt & pepper to taste

Procedure:

  1. Put everything in a pot except for the beef short ribs/kaldereta cut. Simmer covered for 10 minutes over medium high heat.
  2. Transfer to a blender and puree for 15 seconds then transfer back to pot and add water if necessary.
  3. Add beef and cook until beef becomes tender. Season with salt and pepper. Serve.
Makes 5 - 6 servings.
