Makes 12 servings.
- Preheat oven to 450°F. Grease muffin pan. Set aside.
- In a mixing bowl, beat eggs until frothy. Gradually add milk alternately with flour and mix for 3 minutes or until the batter becomes smooth. Lastly, add salt and pepper.
- Pour 2 tablespoons of the batter into muffin cups. Bake for 10 minutes.
- Reduce the heat to 375˚F and continue baking for 15 to 20 minutes or until golden brown and puffy. Do not open the oven door during the first 15 minutes of baking. Serve with roast beef.
