YAM WOON SEN (GLASS NOODLE SOUP)


Ingredients:

100 grams sotanghon noodles, soaked and blanched
1/2 cup black fungus mushrooms (tenga ng daga), softened and blanched
1/2 cup shrimp, shelled, deveined and blanched
50 grams PUREFOODS COOKED HAM, julienned
1/2 cup tomato, sliced
1/4 cup sliced shallots
1 pc celery stalk, sliced thinly
1 pc small carrot, julienned
cilantro leaves for garnish

DRESSING:

1/2 cup calamansi juice
2 pc chili pepper, chopped
1/4 cup patis
2 tsp chopped garlic
1 tbsp sugar

Procedure:

  1. Add blanched ingredients and ham in a large bowl then add the dressing. Toss.
  2. Add tomatoes, shallots, celery and carrots. Toss again until well coated. Garnish with cilantro sprigs.
  3. Dressing: Combine ingredients for dressing and mix well.
Makes 2 to 3 servings.
