WALNUT MADELEINE


Ingredients:

10 pc MAGNOLIA BROWN EGGS, use egg yolks only and separate 3 egg whites
1/3 + 1/2 cup powdered sugar
1 1/8 cup MAGNOLIA ALL PURPOSE FLOUR
1/2 cup cornstarch
1/2 cup walnuts, finely chopped
3/4 cup DARI CRÉME CLASSIC, melted
confectioner's sugar for dusting

Procedure:

  1. Grease Madeleine pans. Preheat oven to 400°F.
  2. Beat egg yolks until frothy. Add 1/3 powdered sugar and continue beating until light.
  3. Blend in flour and cornstarch mixture. Set aside.
  4. Beat egg whites and 1/2 powdered sugar until stiff.
  5. Fold nuts into flour mixture, then fold in melted margarine. Stir. Fold into egg white mixture. Fill pans 1/2 full.
  6. Bake for 10 minutes. Lower temperature to 300 F and bake for another 30 minutes or until top and sides are golden brown. Remove from pans immediately and cool on cake racks.
Makes 36 pieces.
