TUNA FRIED RICE

Ingredients:

3 tbsp STAR MARGARINE GARLIC
1 pack (200 g) store-bought frozen vegetables, thawed
1 can (180 g) tuna chunks in water, drained
2 pc MAGNOLIA BROWN EGGS, slightly beaten
4 cups cold cooked rice
1 bundle (15 g) green onions, chopped (2 tbsp)
1/4 tsp iodized fine salt
1/8 tsp pepper

Procedure:

  1. Melt margarine in a large pan over medium heat. Sauté vegetables, then mix in tuna.
  2. Make a well in the center and pour beaten eggs. Let eggs set then scramble to cook.
  3. Add rice and mix well. Cook for about 3 minutes, stirring continuously, then add green onions, and season with salt and pepper.
Makes 6 servings.
(Yield: 6 cups)

Tip:
  • Using day old rice gives fried rice a better texture. Warm and newly cooked rice turns out soggy.
  • Test freshness of an egg by putting it in water. If it sinks to the bottom, it is fresh.
