THREE MEAT TREASURES AND BACON KIMCHI RICE


Ingredients:

1 pack (500 g) PUREFOODS TENDER JUICY CHICKEN & CHEESE HOTDOG, cooked according to package instructions and sliced into 1-inch diagonal pieces
1 pack (450 g) PUREFOODS CRISPY CHICKEN KARAAGE, cooked according to package instructions
1/4 cup (25 g) seasoned nori or Furikake (optional)

Breaded Crispy Tocino

2 packs (220 g each) PUREFOODS PORK TOCINO
2 pc MAGNOLIA BROWN EGGS, beaten
2 cups (130 g) Japanese breadcrumbs
2 cups cooking oil

Bacon-Kimchi Rice

1 pack (200 g) PUREFOODS CLASSIC HONEYCURED BACON, cut into 1-inch strips
4 pc MAGNOLIA BROWN EGGS
1 cup (159 g) kimchi, drained and chopped (reserve 1/4 cup juice)
1 pack (200 g) enoki mushrooms, ends trimmed
1 bundle (100 g)
6 cups chilled cooked rice

Yangnyeom Sauce

1/2 cup tomato ketchup
2 tbsp Gochujang sauce
2 tbsp vinegar
2 tbsp pancake or maple syrup
1 tbsp strawberry jam or jelly
1 tbsp soy sauce
1/8 tsp pepper

Procedure:

1. Keep hotdogs and cooked karaage warm.
2. Make sauce by combining all ingredients. Keep in the chiller until use. 
3. To prepare breaded tocino, mix tocino with beaten eggs, and then coat each piece with breadcrumbs. In a pan with hot oil, deep-fry breaded tocino in batches until golden in color and meat is cooked through. Drain on paper towels and set aside.
4. In a wok or large pan, fry bacon in its own oil. Create a well in the center of the pan and then add the eggs. Cook until nearly set, and then gently scramble them. Stir in bacon and then add kimchi, mushrooms, and green onions. Cook for another 30 seconds and then add rice. Cook, while mixing, until heated through.
5. Place bacon kimchi rice in bowls and arrange hotdog slices, karaage and breaded tocino. Drizzle or serve yangnyeom on the side. Top with seasoned nori.
 
Makes 8 servings.
(Yield: 8 cups rice & 1 cup sauce/1 cup rice & 2 tbsp sauce per serving)

Tip/s:

  • Meat should be wet when breading. To make adhesion of breading better, dip meat in cornstarch batter.
  • Use a small to medium saucepan for frying that is enough for 2 cups oil to minimize oil waste. 
  • The meat dishes can be cooked using an air fryer set at 180o C for 20 to 25 minutes.
