SPANISH BEEF RIBS STEW


Ingredients:

1 kg MONTEREY BEEF RIBS, cut into 2x2 inch cubes
1/4 cup soy sauce
2 pc bay leaves
1 tbsp whole peppercorns
3 cloves garlic, finely crushed
1 (430 g) can crushed tomatoes
1 L water or enough to cover meat
1 (100 g) pc red bell pepper, cut into cubes
1 (100g) pc green bell pepper, cut into cubes
1 cup sliced Swiss button mushrooms
1 tsp iodized fine salt
1/2 tsp freshly cracked peppercorns
1 tbsp sugar

Procedure:

  1. In a pot, place ribs, soy sauce, bay leaves, peppercorns, garlic and tomatoes. Fill with water. Cover and simmer for 45 minutes.
  2. Add bell peppers and mushrooms. Simmer for an additional 15 minutes and season with salt, cracked peppercorns and sugar. 

Makes 5 servings

(Yield: 16 pc (6 cups mixture)/3 pc ribs per serving)
