SOPA DE MARISCO


Ingredients:

1/4 cup MAGNOLIA GOLD BUTTER UNSALTED
1 tbsp crushed garlic
1/4 cup chopped onions
1/4 cup chopped celery
1 cup chopped tomatoes
350 g cooked clams, boiled and reserve 5 cups broth
1 cup fish fillet (any fish)
1/2 cup peeled shrimp
1/2 cup sliced squid
1/2 cup tomato paste
1/4 cup dry white wine
1/4 cup MAGNOLIA CREAM CHEESE
1/4 cup snipped fresh parsley
1 tsp sweet paprika
1 tsp olive oil
1/2 tsp iodized fine salt
pepper to taste

Procedure:

  1. Cook and boil the clams, reserve 5 cups broth.
  2. In a pot, melt butter then sauté garlic, onions, celery and tomatoes. Simmer for 10 minutes.
  3. Add clams, fish, shrimps, squid and cook for 2 minutes
  4. Add tomato paste, clam broth and dry white wine and simmer for 10 minutes.
  5. Meanwhile, combine cream cheese, parsley, paprika and olive oil.
  6. Add to the soup and blend well. Season with salt and pepper. Simmer for 5 minutes further to thicken.
Makes 4 servings.
