SOPA DE AJO


Ingredients:

5 cups sliced white onions
1/4 cup MAGNOLIA GOLD BUTTER UNSALTED
1/4 cup red cooking wine
6 cups beef stock
1/2 tsp iodized fine salt
pepper to taste
2 cups croutons
1/2 (185 g) bar MAGNOLIA QUICKMELT CHEESE, coarsely grated

Procedure:

  1. Sauté onions in butter until onions have caramelized.
  2. Add red wine and reduced to half by simmering. Add beef stock. Simmer for 20 - 25 minutes more. Season with salt and pepper.
  3. Ladle soup in bowls. Top with croutons and grated cheese. Broil for 5 minutes until cheese melts.
Makes 5 to 6 servings.
