Simple Bicol Express


  1. In a heavy bottomed pan, combine garlic, bagoong alamang, pork and cream.
  2. Simmer covered over low heat for 15 minutes, stirring occasionally
  3. Add sili and continue simmering for another 10 minutes until meat is tender.

Makes 8 servings.


  • Use fresh or store bought bagoong alamang.
  • Add veggies like Baguio beans, sigarilyas, papaya or sayote to complement and extend the dish.
  • Add 2 tbsp cornstarch slurry when the meat is tender to thicken the sauce if desired.
