SHRIMP SCAMPI


Ingredients:

1/2 kg shrimp (suahe), shelled and deveined
1/2 tsp iodized fine salt
1/4 tsp pepper
1/3 cup MAGNOLIA GOLD BUTTER UNSALTED
3 cloves garlic, minced (1 tbsp)
1/4 pc (1 tbsp) lemon juice
1/4 pack (of 160 g) MAGNOLIA QUICKMELT CHEESE, grated (1/2 cup)
1 stalk (2 g) parsley, chopped (1 tsp)

Procedure:

1. Season shrimp with salt and pepper. Set aside.
2. In a saucepan, melt butter and sauté garlic.
3. Add lemon juice and mix well. Remove from heat and set aside.
4. Arrange shrimp in a baking dish.
5. Drizzle butter mixture over shrimp then top with cheese and parsley.
6. Broil in the oven set at around 205oC (400oF) until shrimp turn orange and cheese melts.
7. Remove from heat and transfer to a serving platter and garnish with lemon wedges and a sprig of parsley. Serve hot.

Makes 4 servings.

Tip/s:

  • If an oven is not available, use a turbo broiler, an oven toaster, or a microwave oven instead. Alternatively, just sauté the shrimp in the butter mixture until they're cooked. While it's still hot, sprinkle cheese and parsley on top.
