SHANTUNG CHICKEN


Ingredients:

1 (1.2-1.5 kg) pc MAGNOLIA FRESH CHICKEN, cut into 10 pieces
1 tsp soy sauce
1/2 tsp ginger juice
1/2 tsp sugar
1/2 tsp Chinese wine
cooking oil for deep-frying
1 tbsp MAGNOLIA GOLD BUTTER UNSALTED, melted
4 tbsp chopped garlic
1 tbsp char siu sauce*
1 tbsp white vinegar
1 tbsp sugar
1/4 tsp chili garlic sauce
1/2 cup sitsaro
2 pc tomatoes, quartered
1 pc cucumber, sliced

Procedure:

  1. Marinate chicken in soy sauce, ginger juice, sugar and wine for 30 minutes. Deep fry and set aside.
  2. Mix 1 tbsp butter, garlic, char siu sauce, vinegar, sugar and chili garlic sauce until blended. Toss in fried chicken and coat evenly.
  3. Sauté vegetables in remaining butter and serve on top of chicken.

Makes 10 to 12 servings. *may be bought in specialty stores
