SESAME CORNED BEEF CROQUETTES


Ingredients:

1 kg potatoes, boiled
1/2 cup MAGNOLIA GOLD BUTTER UNSALTED, softened
1/2 cup grated MAGNOLIA CHEEZEE
1/2 tsp iodized fine salt
1/4 tsp pepper

FILLING:

1 (210 g) can PUREFOODS CORNED BEEF
1-1/2 cups diced PUEREFOODS LUNCHEON MEAT
1/2 cup MAGNOLIA ALL-PURPOSE CREAM
1/2 tsp calamansi juice
1/2 cup chopped onions
1/2 cup chopped green bell peppers
1 tbsp sugar
1 tsp pepper
1/4 cup raisins
1/4 cup diced carrots
1/4 tsp iodized fine salt
1 tsp chopped parsley for garnish

COATING:

2 pc MAGNOLIA BROWN EGGS, egg yolks and whites separated
1-1/2 cups sesame seeds
2 cups cooking oil

Procedure:

  1. Mash potatoes then add butter and cheese. Season with salt and pepper. Form into 1” balls and set aside.
  2. Combine all filling ingredients in a bowl. Flatten potato balls and stuff with 1 tbsp of the filling. Form into balls again.
  3. Beat egg whites until stiff then fold in egg yolk. Dip croquettes in beaten egg then roll in sesame seeds.
  4. Deep-fry in hot oil. Drain excess oil on paper towels. Garnish with parsley.

Makes 5 servings.
