SANS RIVAL


Ingredients:

7 pc MAGNOLIA BROWN EGGS, separate eggyolks from whites
1/4 tsp cream of tartar
1 tbsp sugar
1/2 cup MAGNOLIA ALL PURPOSE FLOUR
1-1/2 cups finely chopped cashew nuts
1/4 cup water
1 cup sugar
1-1/2 cups MAGNOLIA GOLD BUTTER UNSALTED

Procedure:

  1. Preheat oven to 325°F. Line the back of two 16 x 11 x 1” jelly roll pans or five 8” round pans with aluminium foil. Grease and dust with flour.
  2. Beat egg whites and cream of tartar until foamy. Add sugar and beat until stiff but not dry. Fold in flour then 1/2 cashew nuts until blended. Pour into pans.
  3. Bake for 15 to 20 minutes or until light brown in color. Turn off oven and leave wafer to dry completely.
  4. Cut wafer to make 4 layers. Prepare each layer by spreading some buttercream filling evenly and sprinkling some chopped nuts. Repeat procedure to finish 4 layers. Frost entirely with buttercream and sprinkle with more nuts. Chill before serving.

BUTTERCREAM FILLING:

  1. Make syrup by boiling water and sugar in a medium saucepan until it forms a thread.
  2. Beat egg yolks until thick and lemon colored. Add syrup in fine streams while continuously beating egg yolks. Chill egg mixture at once by letting the saucepan sit in ice water. Set aside.
  3. Cream butter until fluffy. Add chilled egg mixture. Continue to beat until well blended.

Makes 8 to 10 servings.
