SALTED EGG SPARERIBS

Ingredients:

1	kg	MONTEREY PORK SPARERIBS
1	tsp	iodized fine salt
1/4	tsp	pepper
2	pc	MAGNOLIA BROWN EGGS
1	cup	MAGNOLIA ALL PURPOSE FLOUR
3	tbsp	cooking oil
3	tbsp	MAGNOLIA GOLD BUTTER
1/2	tbsp	grated ginger
4	pc	salted egg yolks
1/2	cup	MAGNOLIA PURE FRESH MILK
2	tbsp	sugar
1	pc	sili labuyo
1 (30 g)	bundle	green onion

Procedure:

Pat spareribs dry and season with salt and pepper. Dip in eggs then dredge in flour, shaking off excess. Fry in heated oil. Drain on paper towels. Set aside.
In a pan, melt butter then add ginger and salted egg yolks. Cook for 2 minutes. Add milk, sugar and sili. Cook for another 3 minutes, stirring occasionally. Add half of green onions.
Coat spareribs with salted egg butter. Garnish with remaining green onions.

Makes 8-10 servings.
