SALTED CARAMEL KAMOTE-CUE


Ingredients:

1 (400 g) pc sweet potatoes (kamote), peeled and sliced 1/4 inch thick pieces
1/2 cup DARI CREME BUTTERMILK
1/2 cup salted caramel
1 tsp toasted sesame seeds

Salted Caramel

1/4 cup sugar
2 tbsp water
1-1/2 tbsp DARI CREME BUTTERMILK
2 tbsp MAGNOLIA ALL PURPOSE CREAM
1/8 tsp iodized fine salt

Procedure:

  1. Prepare salted caramel sauce by combining sugar and water in a saucepan over medium heat. Stir until sugar has dissolved and then let simmer without stirring until golden brown (or amber) in color.
  2. Add margarine and swirl around the pan until it melts. Add cream slowly and stir until thick. Set aside.
  3. Pan-fry sweet potatoes in margarine until golden brown. Drain excess oil on paper towels. 
  4. Toss fried sweet potatoes in salted caramel sauce or pour salted caramel sauce on fried sweet potatoes placed on a rack with a tray underneath. Sprinkle with toasted sesame seeds just before serving.

 

Makes 6 sevings

Yield: 18 slices & 1/4 cup caramel sauce/3 slices per serving)
