1 (1.2 kg) pc whole MAGNOLIA CHICKEN, pat-dried
1 (100 g) pc lemon, zest taken and cut in half

Mayonnaise Mixture:

1 tsp lemon zest
2 tsp iodized fine salt
1/2 tsp pepper
1 head garlic, finely crushed
1 tsp dried sage
1 tsp dried rosemary


  1. In a bowl, combine ingredients for mayonnaise mixture. Mix well and set aside.
  2. Squeeze lemon juice on chicken and place lemon halves inside cavity.
  3. Spread mayonnaise mixture underneath skin, inside the cavity and outside chicken. Place chicken breast side up on a roasting pan with rack.
  4. Roast for 1 hour and 30 minutes at 300oF. Increase temperature to 350oF and roast for another 30 minutes until golden brown.


Makes 8 servings.

(Yield: 8 cuts of chicken (2/3 cup mayo mixture)/1 pc chicken per serving)
