RAINBOW STEAMED FISH WITH MAYONNAISE


Ingredients:

1 (1.3 to 1.5 kg) pc fish (maya-maya, pla-pla, talakitok), cleaned
1 tsp iodized fine salt
1 (30 g) stalk green onion, chopped
1 (30 g) thumb ginger, sliced into strips

Dressing:

1 (470 mL) pack MAGNOLIA REAL MAYONNAISE
1/4 tsp iodized fine salt
1 clove garlic, minced finely (optional)
1 (30 g) pc onion, chopped (optional)

Garnishing:

2 pc MAGNOLIA BROWN EGGS, hard-boiled, peeled and yolks and whites separately chopped
1 (50 g) pc red bell pepper, finely chopped
1/2 (of 160 g) pack DAILY QUEZO, grated
1/3 cup pickle relish
1 (80 g) pc carrot, peeled and finely chopped or grated

Procedure:

  1. Prepare steamer. Meanwhile, rub fish with salt and then stuff with green onions and ginger. Steam for 30 minutes until cooked through. Set aside to drain and cool a bit.
  2. In a bowl, mix mayonnaise, salt, garlic and onion. When fish is cool enough, spread mayonnaise on whole surface of fish.
  3. Garnish by covering head part with chopped egg white and then arrange the remaining ingredients by layer (1 inch thick) to make a rainbow appearance.

Makes 6-8 servings.
