PUREFOODS FIESTA HAM IN BEER & HONEY SAUCE


Ingredients:

1 whole PUREFOODS FIESTA HAM
1-1/4 tsp sugar
1 cup carrots, chopped very finely
1 cup celery, chopped very finely
1/2 cup leeks, chopped very finely
1/2 cup onion, chopped very finely
1 cup MAGNOLIA GOLD BUTTER UNSALTED
1 tbsp parsley
1-1/2 bottle SAN MIGUEL BEER PALE PILSEN
chicken stock
4 pc cloves
1/4 cup honey

SLURRY:

1 tbsp cornstarch, mixed with
2 tbsp water

Procedure:

  1. Caramelize carrots, celery, leeks and butter until vegetables are tender and limp. Add ham and sauté with vegetable *mirepoix.
  2. Add beer and enough stock to cover ham. Add honey. Simmer until vegetables have broken down into a sauce. Finish with parsley, cloves, salt and pepper.
  3. Add slurry to bind sauce all together. *mirepoix – a mixture of onion, carrots, and celery
