Pre-heat oven at 375 F. Place ham in an oven-proof dish. Set aside.
Combine fruit cocktail syrup, pineapple juice, brown sugar, laurel leaf and cinnamon bark. Mix well until sugar particles are completely dissolved. Pour on ham and bake for 20-30 minutes, basting with sauce 3-4 times.
Place baked ham on a serving platter. Garnish with lettuce leaves and arrange fruit cocktail around the ham. Top with desiccated coconut. Serve. Boil remaining sauce and serve with Fiesta Ham.
