Pork Tokwa Tausi
- Heat oil and deep-fry tofu until golden brown. Set aside.
- In another pot, combine water, pork, and vinegar. Bring to a boil without stirring. Add garlic, bay leaf, salt, and pepper. Cook pork until fork tender. Reserve 1/2 cup of stock. Set aside.
- In a pan, heat oil and sauté onions and garlic until fragrant. Add pork until slightly browned. Add tomatoes and mash until juices come out.
- Add reserved stock and bring to boil. Add fried tofu and tausi. Season with salt and pepper and continue to cook for 2-3 minutes more.
