PORK ROLL ROAST


Ingredients:

1 tbsp rosemary
1/2 tbsp thyme
3 tbsp prepared mustard
1/4 cup cooking oil
1 (2-3 kg) pc boneless, skinless MONTEREY PORK LIEMPO
1 tsp iodized fine salt
1 tsp pepper

BLACK PEPPER GRAVY:

4 tbsp MAGNOLIA GOLD BUTTER UNSALTED
2 cups MAGNOLIA ALL PURPOSE FLOUR
2 cups beef broth
4 tsp liquid seasoning
2 tbsp coarsley ground black peppercorns

Procedure:

  1. Preheat oven to 350°F.
  2. Combine first 4 ingredients in a small bowl. Rub this mixture on both sides of liempo. Season with salt and pepper.
  3. Roll meat with fat side out and secure with a string. Transfer rolled meat on a roasting pan and cover with aluminum foil.
  4. Bake for 1 hour then remove foil. Bake again for another 30 minutes to brown pork. Serve with black pepper gravy.

Black Pepper Gravy:

  1. In a pan, melt butter. Whisk in flour and slowly add broth. Add liquid seasoning and peppers. Simmer for 3 minutes.
