PORK ROAST IN MAPLE RAISIN SAUCE


Ingredients:

1 tsp iodized fine salt
1/2 tsp pepper
1 tbsp cooking oil
1 kg MONTEREY ROLLED ROAST PORK
1/2 cup maple syrup
1/2 cup water
1 tbsp PRIMERA LIGHT BRANDY
1 pinch cinnamon
1/4 cup raisins

Procedure:

  1. Preheat oven to 200°F. In a bowl, combine salt, pepper and oil. Brush mixture to prepared roast pork. Slowly roast pork until it reaches internal temperature of 160°F, for about 1 hour.
  2. In a saucepan, combine maple syrup, water, brandy, cinnamon and raisins. Mix everything together and let boil. Set aside.
  3. In a large platter, place roast pork and pour maple raisin sauce on top. Garnish with assorted fruits such as grapes, if desired.
Makes 6 servings.
