PINAUPONG MANOK


Ingredients:

1.8 to 2.2 kg pc MAGNOLIA JUMBO CHICKEN
1 (100g) pc onions, quartered
1 head garlic, crushed
4 slices ginger
3 stalks tanglad or lemongrass, chopped
6 pc peppercorns
1 pc bay leaf (laurel)
3 cups rock salt

DIPPING SAUCE

1 tbsp minced ginger
1/2 cup cooking oil

Procedure:

  1. Prepare chicken by rubbing it with 1 tbsp of rock salt.
  2. Stuff onion, garlic, ginger, tanglad, peppercorns and bay leaf into the cavity.
  3. Pour remaining rock salt at the bottom of a deep pan.
  4. Place chicken on bed of salt, sitting upright, making sure no part of chicken touches metal of pan.
  5. Cover pan and cook over low-medium heat for 1-1 ½ hours or until juices are clear from blood.
  6. Serve with dipping sauce

Makes 8 servings.
