PINAPUTOK NA MANOK


Ingredients:

1 kg MAGNOLIA FREE RANGE CHICKEN, cut into 8 pieces
3 cloves garlic
60 grams lemongrass, use white bulbs only, crushed and chopped
1/2 (125 g) cup tamarind leaves
3 tbsp cooking oil
1 (25 g) knob ginger, chopped
1 tsp iodized rock salt (or 1/3 tsp iodized fine salt)
1/4 tsp black peppercorns, crushed
1 bundle banana leaves

Procedure:

 

  1. In a bowl, marinate chicken with garlic, lemongrass, tamarind leaves, oil, ginger, salt and peppercorns for at least 1 hour.
  2. Line a deep pot with banana leaves. Place chicken in the center and completely cover with remaining banana leaves. Cover pot and cook for 1 hour or until chicken is tender.

Makes 8 servings.
