PETITE PRUNE CAKE


Ingredients:

1-1/2 cups MAGNOLIA ALL PURPOSE FLOUR
1 tsp sifted baking soda
1 tsp sifted baking powder
1 tsp iodized fine salt
1 tsp cinnamon powder
1 cup oatmeal
1 cup finely chopped prunes
1/2 cup packed dark brown sugar
1/2 cup granulated white sugar
1 cup mashed ripe bananas
2/3 cup BAKER'S BEST MARGARINE, melted
2 pc MAGNOLIA BROWN EGGS
3/4 cup whole walnuts, for garnish

Procedure:

  1. Preheat oven to 350°F. Line, grease and dust with flour 3 medium loaf pans. Set aside.
  2. Combine first 7 ingredients. Set aside. In another bowl, combine brown and white sugar, bananas, margarine and eggs. Mix well.
  3. Add flour mixture to banana mixture. Divide batter equally among prepared pans. Top with whole walnuts. Bake for 30 to 35 minutes or until a toothpick comes out clean.
Makes 3 cakes.
