Peach Streusel Squares


Ingredients:

1-1/4 cups cake flour
1 tsp baking powder
1/4 tsp iodized fine salt
2/3 cup MAGNOLIA GOLD BUTTER UNSALTED
2/3 cup sugar
3 pc MAGNOLIA BROWN EGGS, separate yolks from white
1/2 cup MAGNOLIA FULL CREAM MILK
1/4 cup sugar

STREUSEL TOPPING:

1/2 cup MAGNOLIA GOLD BUTTER UNSALTED
3/4 cup MAGNOLIA ALL PURPOSE FLOUR
1/4 cup brown sugar
1/2 tsp ground cinnamon
1/3 cup cornflakes, crushed

Procedure:

  1. Preheat oven to 350°F . Line a 7" x 13" baking pan with aluminum foil. Grease pan and set aside.
  2. Sift together flour, baking powder and salt. Set aside. Cream butter and sugar until light and fluffy. Add in yolks one at a time mixing well after each addition. Blend in dry ingredients in thirds alternately with milk in 2 additions. Set aside.
  3. Beat egg whites and remaining sugar until stiff. Fold into the butter mixture. Transfer to prepared pan and top with chopped peaches. Bake for 10 minutes. Sprinkle streusel on top and bake for another 15 minutes or until done.
  4. To make the streusel topping, cut in butter in flour, sugar and cinnamon using a pastry blender or 2 knives. Blend in cornflakes and use as required.
Makes 24 servings.
