PAMANA NI LOLA


Ingredients:

1 kg MONTEREY PORK PATA, cut 1 1/2" thick
2 tbsp cooking oil
2 tbsp minced garlic
1 pc onion, chopped
1 cup chopped tomatoes
1 pc tahure, diced
1-1/2 cups pork broth (from boiling pata)
2 cups pineapple chunks, fresh or canned
1/2 tsp pepper
2 tbsp sugar

Procedure:

  1. Place pata in a deep saucepot. Add water until pork is completely covered.
  2. Allow to boil then let simmer, covered until pata becomes tender. Set aside.
  3. In a saucepan, heat oil, Sauté garlic, onion, tomatoes and tahure. Add cooked pata and cook for 10 minutes.
  4. Add the broth and pineapple chunks.
  5. Bring to a boil and let simmer for about 15 minutes. Season with pepper and sugar.
Makes 5 servings.
