ONE POT SAUSAGE CAJUN RICE


Ingredients:

2 tbsp MAGNOLIA BUTTER-LICIOUS! SALTED
1 (100 g) pc onion, chopped
2 cloves garlic, minced
1 (200 g) pack PUREFOODS DELI BOCKWURST
2 tbsp cajun seasoning
3 tbsp tomato paste
2 cups rice, washed once
3 cups beef broth
1 (200 g) pack frozen mixed vegetables
1 (80 g) pc red bell pepper, chopped

Procedure:

  1. Melt butter blend in a pot and sauté onion, garlic, and sausage.
  2. Add cajun, tomato paste, and rice. Stir until rice is almost dry.
  3. Add broth. Cover and simmer for 25 minutes, until rice is tender.
  4. Top with vegetables. Cover and cook for another 5 minutes.
  5. Gently stir rice before serving.

Makes 7 servings.
(Yield: 7 cups/1 cup per serving)

Tip/s:

  • To make homemade Cajun seasoning, mix together 3 tsp smoked paprika, 2 tsp iodized fine salt, 2 tsp garlic powder, 1 tsp pepper, 1 tsp white pepper, 1 tsp onion powder, 1 tsp dried oregano, 1 tsp cayenne, 1/2 tsp dried thyme. Store in an airtight container.
