ONE PAN TOMATO CHICKEN RICE


Ingredients:

1 kg MAGNOLIA CHICKEN STATION THIGHS
2 tsp iodized fine salt
1/2 tsp pepper
2 tbsp cooking oil
4 (630 g) pc saba bananas, sliced lengthwise
1 (50 g) pc red onion, chopped
2 cloves garlic, finely crushed
1/3 cup tomato paste
2 cups rice, washed once
1 (4 cups) L chicken stock
2 (60 g) pc tomatoes, chopped
1/2 cup frozen mixed vegetables (peas, carrots, corn)

Procedure:

  1. In a bowl, season chicken with salt and pepper. Set aside.
  2. Heat oil in a pan and fry bananas until brown. Drain excess oil and set aside.
  3. In the same pan, fry chicken until lightly browned. Add onion, garlic and tomato paste. Sauté for 5 minutes. Add rice and stir for 5 minutes.
  4. Add chicken stock, and then cover and cook over low heat for 25 minutes or until rice is cooked.
  5. Add tomatoes and mixed vegetables. Cook for another 5 minutes uncovered. Arrange or serve with fried bananas on the side before serving.

Makes 5 servings.

(Yield: 10 cups mixture with chicken/2 cups with chicken per serving)
