EASY CORNED BEEF & CHEESE PASTA FRITATA


Ingredients:

2 tbsp cooking oil
150 grams onions, chopped
6 cloves garlic, chopped
180 grams potatoes, diced
1 (210 g) can PUREFOODS CORNED BEEF
40 grams macaroni pasta, cooked according to package instructions
3 pc MAGNOLIA BROWN EGGS, beaten
1 tbsp water
1 (160 g) pack MAGNOLIA CHEEZEE, grated
1/8 tsp iodized fine salt
1/8 tsp pepper
2 tbsp MAGNOLIA GOLD BUTTER SALTED

Procedure:

  1. Heat oil. Sauté onions and garlic until tender. Add potatoes and cook until tender.
  2. Add corned beef and mix well. Set aside.
  3. In a large mixing bowl, mix macaroni and corned beef. Set aside.
  4. In another bowl, beat eggs and add water, cheese and season with salt and pepper.
  5. In a non-stick pan, melt butter, Fill pan with macaroni-corned beef mixture and then pour egg-cheese mixture over the corned beef mixture. Cook over low heat until frittata begins to set.  Turn over and cook the other side.

Makes 8 servings.
