CHOCOLATE CAKE WITH FUDGE ICING


Ingredients:

2-1/2 cups MAGNOLIA ALL PURPOSE FLOUR
2 tsp baking powder
2 tsp baking soda
1/2 tsp iodized fine salt
1 cup cold water
1/2 cup cocoa powder
1 tsp vanilla extract
1 (200 g) bar MAGNOLIA BUTTER-LICIOUS!
2-1/2 cups sugar
4 pc MAGNOLIA BROWN EGGS

FUDGE ICING:

1 (300 mL) can condensed milk
1 (70 mL) can evaporated milk
1 cup cocoa powder
1 cup sugar
1/2 cup corn syrup
1/4 cup MAGNOLIA BUTTER-LICIOUS!

Procedure:

  1. Preheat oven to 325°F. Line with baking paper two 9” round pans. Set aside.
  2. Combine flour, baking powder, baking soda and salt in a bowl. Set aside.
  3. In another bowl, combine cold water, cocoa and vanilla. Mix until smooth and set aside in the refrigerator.
  4. Cream Butter-licious! and sugar for 10 minutes at medium speed.  Add eggs one at a time, beating well after each addition. At low speed, add dry ingredients alternately with cocoa mixture. Mix until smooth.
  5. Divide and pour mixture into prepared pans and bake for 25 to 30 minutes or until done. Invert cake and let cool.
  6. Mix fudge ingredients in a saucepan. Cook over medium heat until slightly thickened. Put cake on top of the other on a cooling rack. Pour over warm icing on top of cake. Spread icing in between. Pour rest of icing on top of cake.
Makes 10 to 12 servings.
