MENUDO


Ingredients:

1/2 kg MONTEREY PORK MENUDO CUT
1 tbsp soy sauce
3 pc calamansi, juice extracted
1/4 cup DARI CREME CLASSIC
1 (50 g) pc onion, sliced
4 cloves garlic, minced or crushed finely
1 cup tomato sauce
1 cup water
1 pc bay leaf (laurel)
1/2 tsp pepper
1 tsp iodized fine salt
150 grams green or red bell pepper
150 grams potatoes, peeled and cubed
150 grams carrot, peeled and cubed
150 grams MONTEREY PORK LIVER, cubed

Procedure:

  1. Marinate pork in soy sauce and calamansi juice. Set aside and chill for at least 30 minutes.
  2. In a pan, melt margarine. Sauté onion and garlic, and then add marinated pork. Saute until meat turns brown, and then pour tomato sauce, water, bay leaf, salt and pepper. Cover and simmer until meat is tender.
  3. Add bell pepper, potato, carrot and liver. Simmer for 10 more minutes or until veggies are tender. Adjust taste as needed.
Makes 5 servings.
