MECHADO GUMBO


Ingredients:

1 L (4 cups) beef stock
1 pack (450 g) PUREFOODS READY-TO-EAT BEEF MECHADO
1 can (400 mL) crushed tomatoes or tomato sauce
2 tbsp (25 g) cajun seasoning
1 pack (200 g) PUREFOODS DELI BOCKWURST, sliced into 1 inch rings
1 pc (100 g) carrot, cut into small cubes
1 pc (100 g) bell pepper, cut into small cubes
1/4 kg okra, washed and cut into 1 inch pieces
1 cup (164g g) canned corn kernels, drained
1/8 tsp iodized fine salt
1/4 tsp pepper

Procedure:

1. In a pot, boil beef stock. Once boiling, lower heat and add beef mechado and crushed tomatoes. Simmer for 15 minutes until sauce slightly thickens.
2. Season with cajun spice and mix well.
3. Add sausage, carrot, bell pepper, okra and corn kernels. Continue to simmer for 5 to 10 minutes or until okra is tender. Add more water or stock if needed. Season with salt and pepper.
 
Makes 6 servings.
(Yield: 9 cups total /1-1/2 cups per serving)

Tip/s:

  • PUREFOODS READY-TO-EAT BEEF CALDERETA and OTHER PUREFOODS DELI SAUSAGE and FRANKS can be used as substitute.
  • Use sliced corn on the cob instead of corn kernels.
  • ake homemade cajun seasoning by combining 3 tbsp smoked paprika, 2 tbsp garlic powder, 1 tsp iodized fine salt, 1 tbsp cayenne, 1 tbsp onion powder, 1 tbsp dried oregano,1 tbsp dried thyme, 1/2 tsp cumin, pinch pepper, and pinch chili pepper flakes. Store in an airtight container and keep away from heat and moisture.

Note/s:

  • Add more beef stock when sauce thickens up
