MEAT-FREE SHANGHAI ROLLS


Ingredients:

1 pack (200 g) VEEGA MEAT-FREE GINILING
1 pack (300 g) tokwa (firm tofu), lightly fried in 1 tbsp oil and then cubed
1 pc (100 g) carrot, shredded
1 stalk (15 g) green onion, chopped
1-1/2 tsp iodized fine salt
1/2 tsp pepper
2 pc MAGNOLIA BROWN EGGS
18 pc lumpia wrappers (6-inch square cut wrappers)
1 cup cooking oil

Procedure:

  1. In a bowl, combine meat-free giniling, tokwa, carrot, green onion, salt, pepper and eggs. Mix well.
  2. Place every tsp of filling in lumpia wrappers. Roll tightly with tucked ends.
  3. Deep-fry in hot oil. Place on rack or paper towels to drain excess oil. Cut rolls in half, if desired. Serve with sweet chili ketchup.

Makes 18 pieces.
