LEMON AND CHEESE SQUARE BITES



Ingredients:

CRUST:

1 (225 g) bar BAKER'S BEST MARGARINE
1/4 cup powdered sugar
2 cups MAGNOLIA ALL PURPOSE FLOUR
85 g MAGNOLIA QUESO DE BOLA, grated (1/2 cup)

FILLING:

4 pc MAGNOLIA BROWN EGGS
1-1/2 (300 g) cups sugar
1-1/2 (225 g) pc lemons, juice squeezed (6 tbsp)
1/4 (30 g) cup MAGNOLIA ALL PURPOSE FLOUR
1 (14 g) tbsp BAKE BEST BAKING POWDER
1/2 (2.5 g) tsp iodized fine salt

TOPPING:

1/8 (15.6 g) cup powdered sugar
85 g MAGNOLIA QUESO DE BOLA, grated

Procedure:

  1. Preheat oven to 350°F. Line a 9" x 13" baking pan with aluminum foil. Grease prepared pan.
  2. Cream margarine until light in color. Add sugar, flour and queso de bola. Mix until well blended. Transfer to prepared pan and press firmly with the back of the spoon. Bake for 20 minutes. Set aside.
  3. For the filling, beat eggs and sugar until thick. Gradually add lemon juice. Fold in flour, baking powder and salt. Pour into crust and bake for 20 minutes. Lower oven temperature to 325°F and bake for another 10 minutes.
  4. While still hot, lift foil from the pan and cut into 1" squares. Sprinkle with powdered sugar and grated queso de bola.

Makes 8 to 10 servings.
