LECHON MANOK POT ROAST


Ingredients:

1 (1.2 kg) pc MAGNOLIA WHOLE CHICKEN
2 stalks lemongrass, tied
1 head garlic, cut in half crosswise
1 (500 mL) bottle lemon-lime soda
1/2 cup fish sauce
2 tbsp calamansi juice
1 tsp cracked black peppercorns
1/4 cups cooking oil

Procedure:

  1. In a bowl, stuff chicken with lemongrass and garlic. Add soda, fish sauce, calamansi juice and peppercorns. Marinate in the refrigerator for at least 2 hours or overnight. Drain but reserve marinade.
  2. In a heavy bottomed pot/casserole, heat oil and fry chicken on all sides until skin is golden brown. Remove excess oil and then add marinade.
  3. Position chicken back side up. Cover and cook for 20 minutes. Turn chicken and continue cooking for another 20 minutes or until chicken is cooked through. 

Makes 8 servings.
