Makes 6 servings
- In a bowl, mix together chicken, garlic and eggs. Set aside.
- In a hot pan with hot oil, pour enough egg mixture to cover the pan. Using low heat, cook until egg solidifies. Fold eggs into the center, flip to evenly cook the other side. Divide into six portions.
- Assemble into jars or takeaway containers. Place rice at the bottom, then top with an omelette and drizzle with catsup and mayo.
