GRILLED VEGETABLES AND SAUSAGE SANDWICH


Ingredients:

1/4 cup olive oil
1 tbsp minced garlic
1 pc eggplant, sliced
1 pc tomato, sliced
1 (60 g) pc red bell pepper, cut into 1" squares
1 (60 g) pc green bell pepper, cut into 1" squares
4 pc Italian ciabatta or whole wheat bread, sliced lengthwise
1 (230 g) can PUREFOODS CHICKEN VIENNA SAUSAGE, drained and sliced

Procedure:

  1. Combine olive oil and garlic in a bowl. Mix well.
  2. Brush vegetables with olive oil-garlic mixture and pan-grill until sides burn. Remove from heat and set aside.
  3. Brush insides of bread with remaining oil mixture then arrange grilled vegetables and sausage on top. Grill in oven toaster until golden brown in color.
Makes 4 servings.
