GRILLED PORK TENDERLOIN BBQ WITH PEANUT SAUCE


Ingredients:

2 (330 g each) packs MONTEREY PORK TENDERLOIN BBQ, sticks wrapped with foil
1 (170 g) bottle SKIPPY CREAMY PEANUT BUTTER
1 cup store-bought French dressing
1 tsp curry powder
1/2 tsp cayenne pepper
2 tbsp cane vinegar
1 tbsp sugar
1 (250 g) pc cucumber, peeled, deseeded and sliced
1/3 cup thinly sliced red onion

Procedure:

  1. In a small bowl, whisk together peanut butter, dressing, curry and cayenne. Mix well. Set aside.
  2. Heat grill pan and cook skewers for 2 minutes on each side or until meat is cooked through. Serve with peanut sauce and cucumber relish.
  3. To make cucumber relish, combine sugar and vinegar in a bowl until sugar is dissolved and then add cucumber slices, and onion. Chill until use.  

Makes 8 servings.

(Yield: 16 pc skewers, 2 cups sauce & 1 cup cucumber relish/2 pc skewers, 1/4 cup sauce &

 2 tbsp relish per serving)
