GLAZED HAM WITH ORIENTAL FRUIT SAUCE


Ingredients:

1 (1 kg) pc PUREFOODS FIESTA HAM

Glaze

12 pc cloves
1 cup crushed pineapples, drained
1/4 cup brown sugar

Oriental Fruit Sauce

calamansi stuffed with nata de coco, preserved & quartered
1 cup nata de coco in syrup, drained
2 tsp ginger, pounded
1 cup diced santol flesh
1 cup peeled, seeded and sliced ripe guava
2 cups red wine (optional)
1/2 cup syrup
3 pc laurel leaves (bay leaves)

Procedure:

  1. Preheat oven to 375˚F. Place ham on a shallow pan with fat side up. Make 1/4-inch deep diamond cuts on the surface.
  2. Spread crushed pineapple evenly on top of ham and sprinkle with brown sugar. Arrange whole cloves on top.
  3. Bake hams for 45 minutes. Let it cool for 20-30 minutes before slicing. Serve with Oriental fruit sauce.
  4. To make sauce, place all ingredients in a pan. Boil then simmer for 45 minutes until sauce thickens.
Makes 10-15 servings.
