GARLIC CHICKEN BOTTOMS


Ingredients:

1/4 kg MAGNOLIA CHICKEN STATION BOTTOMS (ASS)
1/4 cup minced garlic
1-1/2 tbsp light soy sauce
1/4 cup vinegar
1/2 cup water
1/2 tsp peppercorns
1 pc bay leaf (laurel)
1 tsp sugar

Procedure:

  1. Combine ingredients in a saucepan. Boil for 10 minutes.
  2. Remove chicken bottoms from sauce. Discard sauce.
  3. Sear* chicken bottoms in a hot frying pan for 10 minutes to extract the oil.
  4. Drain excess oil. Serve as rice topping or appetizer.
Tip/s: Sear is to cook at a high temperature until a caramelized crust forms.
Makes 3 to 4 servings.
