Gaeng Kiew Wan Neua (green Chicken Curry)


  1. Saute the curry paste in oil. Pour the coconut milk, stir well and add the chicken.
  2. When boiling, add eggplant and kaffir lime leaves. When the vegetables are cooked, add in the chili, fish sauce and sugar. Mix well.
  3. Add the sweet basil leaves. Then remove from heat.

Makes 3-4 servings
