FRUITCAKE AND CHEESE FINALE


Ingredients:

1 (225 g) pack MAGNOLIA CREAM CHEESE, softened
1/4 cup sugar
1 (250 mL) pack MAGNOLIA ALL-PURPOSE CREAM, chilled
1 tbsp unflavored gelatin
3 tbsps MAGNOLIA FULL CREAM MILK
2 cups fruitcake, cut into chunks
2 tbsp PRIMERA LIGHT BRANDY

Topping:

graham crackers, finely crushed
fresh fruits
chocolate shavings or crumbled chocolate

Procedure:

  1. Beat softened cream cheese. Add sugar and blend well.
  2. In another bowl, whip cream until stiff.
  3. Meanwhile, combine gelatin with milk. Set aside and allow to bloom for about 5 minutes. Melt gelatin until completely dissolved. Fold in whipped cream with cream cheese mixture.
  4. Pour in gelatin into mixture and blend well. Fold in fruitcake chunks and brandy.
  5. Divide mixture equally into 9 stemmed glasses or custard cups (about 1/3 cup per serving). Top with graham cracker crumbs, crumbled chocolate or fresh fruits on hand.
Makes 9 servings.
