FRAGRANT CHINESE OX TAIL STEW


Ingredients:

2 kg MONTEREY OX TAIL, cut into pieces
1/2 tsp iodized fine salt
1/4 tsp pepper
1/4 cup cooking oil
1/2 cup Shao Xing rice wine or regular rice wine
1/3 cup soy sauce
2 tbsp brown sugar
6 cups water or enough to cover oxtail
2 pc star anise, broken into pieces
6 stalks green onions, cut into 2" lengths
6 slices ginger
4 cloves garlic, chopped
1 pc orange, 4 large strips of zest removed and juice reserved
1/4 cup chopped green onions (garnish)

Procedure:

  1. Season oxtails with salt and pepper.
  2. Heat oil in a casserole. Brown oxtail pieces on all sides.
  3. Remove oil from casserole then add wine and mix. Add soy sauce, sugar, water, star anise, spring onions, ginger and garlic. Bring to a boil. Add orange zest. Cover and lower heat to allow to simmer. Cook until oxtails are very tender. Add 1 cup of orange juice then simmer for another 2 minutes. Top with spring onions.

Makes 12-15 servings.
