FISH STEAKS WITH ORANGE BUTTER


Ingredients:

4 (200 g each) slices tanigue steaks
orange rind and wedges (optional)
iodized fine salt and pepper to taste
orange butter
1/2 cup MAGNOLIA GOLD BUTTER UNSALTED
1 tbsp orange juice concentrate
1 tbsp chopped parsley

Orange Butter:

1/2 cup MAGNOLIA GOLD BUTTER UNSALTED
1 tbsp orange juice concentrate
1 tbsp chopped parsley

Procedure:

  1. Prepare orange butter by blending butter, orange juice concentrate and parsley. Wrap in a sheet of greaseproof paper then roll to form a log shape. Chill.
  2. For tanigue steaks, season with salt and pepper.
  3. Pan-grill until cooked and serve with a slice of orange butter. Garnish with orange rind and wedges, if desired.
Makes 4 servings.
