FAVADA


Ingredients:

1 cup white kidney beans, soaked for at least 3 hours then drained
1 tbsp dried rosemary
1/3 cup chopped garlic
beef stock* as needed
2 tbsp extra virgin olive oil
1 (200 g) pack PUREFOODS CLASSIC BACON HONEYCURED, cooked until crispy
3 pc PUREFOODS CHORIZO BILBAO STYLE, sliced
1 (100 g) pc white onion, chopped
5 (35 g each) pc tomatoes, chopped
2 tsp iodized fine salt
2 tbsp red wine vinegar

Procedure:

  1. In a saucepan, combine kidney beans, rosemary and garlic. Put water enough to cover beans and bring to a boil. Cover and simmer until beans are tender. Drain and measure liquid. Liquid should reach 5 cups. Add beef stock if needed.
  1. In the same saucepan, heat olive oil. Sauté bacon, chorizo, onions and tomatoes. Cook until tomatoes are tender. Return beans and liquid. Add salt and vinegar. Cover and let it simmer for 15-20 minutes.
Makes 5 servings.
